Icebox Cookie Cheesecake

 



*Ingredients (for 16 cake wedges):


°24 Oreo cookies, divided

°3 tablespoons melted butter

°3 pkg. (250 g each) Philadelphia-style cream cheese 3/4 cup sugar

°1 teaspoon of vanilla

°3 eggs


*Preparation :


Preheat oven to 350°F. In a medium bowl, finely crush 16 Oreo cookies and set aside the crumbs (not the cookie creaming). Add the butter and mix well. Firmly press crumb and butter mixture into bottom of 9-inch cake pan. In a large bowl, beat the cream cheese, sugar, and vanilla with your electric mixer until well blended. Adding one egg at time and keep beating mixture. Chop or crush remaining cookies. You can keep the creaming of the Oreo cookies or not, it's up to you, Gently fold half of the chopped cookies into the dough. Then, add the mixture to the cake pan. Sprinkle remaining chopped cookies over top of cake. Bake cake for 45 minutes or until center is almost set. Using a knife, loosen the outline of the cake from the pan. Let the cake cool before unmolding. Refrigerate the cake for 4 hours.
