Roast Carrots, Potatoes & Onions

 



*Ingredients :


°2 pounds carrots

°6 potatoes

°1 whole sweet onion

°3 cloves of garlic

°6 tsp olive oil

°½ t dried thyme

°½ t dried parsley

°Salt & pepper 


*Preparation


Preheat oven to 475ºF. 

Peeled carrots, cutting them to pieces. Cut the potatoes into bite-size pieces, leaving the skin on. Cut the onion into eighths. Mince the garlic.

Combine carrots, potatoes and onion in a large bowl. Drizzle the vegetables with olive oil, add the garlic, thyme, parsley, salt (to taste) and pepper (to taste). Toss to vegetables are coat with olive oil & seasoning. Place on a cookie sheet in a single layer and cover with foil.
