*Roast Butter Garlic Parmesan Potatoes*
* Ingredients :
° 3 pounds small red potatoes, mashed and cut into quarters
° 1/4 cup olive oil
° 6 large garlic cloves, finely chopped or minced
° Salt // fresh black pepper
° 1 tsp season Italian
° 3/4 cup fresh grated Parmesan cheese
° 1/2 cup unsalted butter
° chop parsley about garnish
° 1/2 cup crispy bacon (optional)...
* Directions :
To cook garlic roasted potatoes with garlic butter Parmesan: Preheat oven to 400°F. Grease a large baking tray with non-stick spray or olive oil and set aside.
Boil baby red potatoes in boiling water for 5 to 8 minutes to pre-cook them. They will be more tender on the inside when roasting.
In a large bowl, combine 1/4 cup olive oil, garlic, salt, herbs, pepper, and Parmesan cheese, tossing together. Add a little olive oil if the Parmesan cheese has absorbed most of it.
Place the boiled potatoes in the garlic and Parmesan mixture to coat evenly.
Arrange the potatoes, covered face down, in a single layer on the prepared baking sheet. Placing baking tray on bottom rack of oven. Bake the Parmesan potatoes with butter and garlic for 25 minutes, flipping after 15 minutes with tongs or a spoon until the potatoes are brown and crispy on the edges.
Meanwhile, gently melt butter in the microwave and mix with fresh chopped parsley. Transfer the roasted potatoes to the oven and sprinkle with the butter and parsley sauce. Add the bacon pieces, toss well and serve the roasted potatoes with garlic parmesan butter right away.
