Ingredients
Pizza dough
30 ml (2 tsp) instant yeast
310 ml (11/5 cups) water, lukewarm
750 ml (3 cups) flour
250 ml (1 cup) yellow cornmeal
5 ml (1 tbsp) tea) salt
30 ml (2 tbsp.) olive oil
60 ml (1/4 cup) butter, melted
Topping for a Chicago-style pizza
1 spicy Italian sausage
15 ml (1 tbsp.) Olive oil
1 onion, chopped
6 button mushrooms, cut in 4
6 slices of pepperoni, cut in 4
1 green pepper, diced
Salt and pepper
500 ml (2 cups) mozzarella, grated
250 ml (1 cup) classic pizza sauce
30 ml (2 tbsp) fresh parmesan, grated
Steps
DOUGH
Step 1: Dissolve the yeast in llukewarm water for 10 minutes. Add all the ingredients and mix them to form a uniform paste. Cover and let stand 30 minutes.
Step 2: Place the dough on a work surface and sprinkle with 15 ml (1 tbsp) of flour. Fold the dough back on itself 15 times to incorporate air.
Step 3: Divide the dough into 2 balls. Place in two bowls, cover and let stand 1 hour.
Step 4: Roll out a ball of dough and place in a 25 cm (10 in) pie pan, forming a 5 cm (2 in) high rim. Let stand 10 minutes and place in the oven on the center rack at 200 ° C (400 ° F) for 10 minutes. Reserve.
GARNISH
Step 5: Extract the meat from the sausage. In a frying pan, heat the olive oil and brown the onion and the sausage meat. When the sausage is cooked, add the mushrooms and cook for another 2 minutes. Add the pepperoni and peppers, then cook for 1 minute. Season with sallt and pepper and set aside.
Step 6: Arrange the mozzarella in the bottom of the pizza crust, pour in the meat and vegetable mixture and press it well so that it is compact.
Step 7: Cover everything with sauce and finish with the Parmesan. Bake on the miiddle rack of the oven at 200 ° C (400 ° F) for 15 minutes. Let stand 16 minutes before carving and serving.
