Cheese Shrimp Penne Pasta & Spinach


 


Do you want a quick breakfast plate? Here is a dish that does not take more than 15 minutes to prepare, despite the distinct flavors it carries. It’s pasta with spinach and shrimp with a light sauce.


* the ingredients:


a packet of pasta (linguini)


1 kilogram of peeled shrimp


3 cups baby spinach leaves


4 garlic cloves


2 tablespoons of tomato paste


1 cup of cherry tomatoes, sliced ​​in half


Half a cup of finely grated Parmesan cheese


1 tablespoon of butter


Half a cup of vegetable oil


6 fresh basil leaves, chopped


Half a teaspoon of oregano spice


Half a teaspoon of black pepper


Chopped parsley, for garnishing


salt


A tablespoon of lemon juice


Directions:


1. Make pasta according to pkg. Last 5 mins of cooking add your shrimp to pasta water. Cook until no longer pink. Drain all but 1 C of water for next step. Keep pasta and shrimp warm.

2. In a pan add oil & butter over Med heat. When butter melts add, pasta to pan. Toss to coat. Season. Cook for 2 mins, stirring often.
