CARROT-CAKE-CHEESECAKE!!!I

 



Looking for the best carrot cake recipe? I think my grandmother's recipe is the best, which is why I decided to share it with you. 


* Ingredients :


+carrot cake :

° 1 cup of white flour.

° 1 teaspoon ground cinnamon.

° 1 cup brown sugar.

° 3 eggs.

° 1 cup shredded carrots.  

° 1/2 teaspoon baking soda and ½ teaspoon baking powder.

° 1/4 c un-sweetened apple juice.

° 1 tsp pure vanilla extract.

° 1/2 c vegetable oil.

° pinch of salt

+ Cheesecake mix:

° 2/3 cup granulated sugar.

° 1 1/2 teaspoons all-purpose flour.

° 2 large eggs.

° 1 teaspoon vanilla.

° 1/2 cup sour cream.

° 2 BKG cheese.

To topping:

° 1 tablespoon of soft butter.

° 1 cup of soft cream cheese.

° 1 1/4 cup powdered sugar.

1 teaspoon vanilla.

 

* directions :


I preheated the oven to 350°F and prepared a springform pan.

Cheesecake mix:

Whisk sugar and flour in a large bowl until well blended.

Using an electric mixer, I blended cream cheese and sugar mixture until smooth, added eggs, vanilla extract, and sour cream, and blended for another 2 minutes. (Sit aside). carrot cake: In a large bowl, combine white flour, baking soda, baking powder, cinnamon, and a pinch of salt (1 minute).


 

In another bowl, add oil, apple juice, brown sugar, eggs, vanilla extract and mix with hand mixer, slowly add dry ingredients, carrots, mixing well.


In a greased springform pan, pour four layers starting with carrot cake mixture then cream cheese mixture, carrots and finally another layer of cream cheese mixture, and bake for 1 hour.  

step topping:

I beat the cheese and butter with an electric hand mixer until smooth, added the remaining garnishing ingredients and blended again about 5 minutes.

Spread the mixture over the cheesecake and chill it in the fridge for an hour.

Note: You can add chopped pecans on top.
